Herschel and Mary opened The Other Pub in 1991, quickly making it the go-to neighborhood hangout on the south side, known for the phrase "There's no 'Other Pub' like us." In 2007, they sold it to their longtime general manager and friend, Walt Foster III. During this time, Josh Shives and Matt Dellinger also got their start.

Walt III and his wife Kristy continued to operate The Other Pub, and in 2010, they purchased land across the street. In June 2012, Walt's Other Pub was born – a two-story, full-service restaurant that set a new standard in Lafayette. "Welcome to Walt's!" became a beloved greeting. Their son, Walt IV, began working various roles at Walt's Other Pub. In June 2022, ten years after opening, Walt and Kristy passed the torch, selling the restaurant to longtime employees Matt Dellinger and Ben Upton.

After the success of Walt's Other Pub, two local developers, Andy Beery and David Hood, approached Walt III in 2016 to create something similar in West Lafayette. In 2017, Walt's Pub & Grill opened, filling a much-needed gap in the area. In 2024, Walt IV returned to the family business as an owner and operator.

In 2021, Walt III, Matt, and Josh began discussing the future of the Walt's brand. After considering several ideas, Walt's Eats & Drinks was established in 2024 to bring that local, welcoming vibe to other parts of Indiana. To ensure the right team was in place for expansion, long-time restaurateur and family friend Chip Comery, along with Walt IV, joined the team.
